STUFFED BRINJAL CURRY(EGGPLANT CURRY)

STUFFED BRINJAL CURRY ALSO KNOWN AS GUTTI VANKAY KURA , is a delightful Indian dish that combines the flavors of Brinjal with sweet and aromatic essence of onions. Perfect for a weekday meal or a special occasion. All of these ingredients are easily found across Indian grocery stores. It is a traditional dish that holds a special place in Indian cuisine.

INGREDIENTS YOU’LL NEED

FOR SOAKING

  • BRINJALS – 10 Small
  • WATER FOR SOAKING
  • SALT

FOR MASALA PASTE

  • 3 ONIONS – Small
  • 2 Tbsp of Coconut pieces
  • 5-6 Garlic cloves
  • 1 inch Ginger
  • Salt -as per taste
  • Chilli powder – 2 tbsps

OTHER INGREDIENTS 

  • 2 Tbsp Oil
  • 1 Tsp Mustard seeds
  • 1 Tsp cumin seeds
  • 2 Reeds of Curry Leaves
  • Coriander- finely Chopped

PREPARATION :

  • Make an X-shaped cut on the bottom of a brinjal. The cut should be deep enough to slightly open up the brinjal.

STUFFED BRINJAL CURRY

  • Soak in water along with 1 tsp salt to avoid discoloring for 10 minutes.
  • Meanwhile, prepare masala paste by grinding ONION,COCONUT,GINGER,GARLIC CLOVES,CHILLI POWDER, SALT. STUFFED BRINJAL CURRY
  • Now stuff in the prepared masala paste to all the brinjals and keep aside.STUFFED BRINJAL CURRY
  • In a large kadai heat 2 tbsp oil . Allow the oil to heat on a medium flame.
  • Add 1 tsp mustard seeds and allow them to splutter. Next add 1 tsp cumin and few curry leaves.STUFFED BRINJAL CURRY
  • Add in stuffed brinjal and saute gentlySTUFFED BRINJAL CURRY
  • Cover and cook for 2-4 minutes stirring occasionally.STUFFED BRINJAL CURRY
  • Add in the leftover masala paste and saute well.STUFFED BRINJAL CURRY
  • cover and cook until brinjals cooked.
  • After completely cooked , the masala will ooze out the oil.
  • Add chopped coriander and mix well.STUFFED BRINJAL CURRY
  • Then turn off the heat.
  • Finally, enjoy stuffed brinjal curry with roti or rice.

NOTES
  • Firstly, use small brinjal for uniform cooking.
  • Adjust salt and chilli powder as per your taste.
